Homemade Almond Butter

You will make the almond butter in batches. Depending on the strength of your food processor, add one to two cups of raw almonds along with a pinch of salt (optional) and pulse until the nuts are broken up into smaller pieces. Now turn on the food processor for four minutes, stopping every so often to scrape sides with a spatula. Once a more “crumb like” consistency appears, leave the food processor to do what it does best – let her run with the on switch flipped for about 15 minutes. It is at this point that you decide what kind of almond butter lover you are, crunchy or creamy. If you prefer your almond butter crunchy, you will want to stop the food processor at about 12 minutes. If you prefer creamy, it shouldn’t take much more than 15 minutes.
